Grips, saddle and tires almost always get swapped before the first ride.
Grips, among other things, define the feel of a bike for me. Usually the grips a bike comes with are too hard or too soft, or not the right shape, or not the right texture. So many nerve cells feel the contact, and the right grips give me a feeling of direct and secure connection with my bike. They last a long time and don't cost much.
Tires get swapped before the first ride, because you can't sell them as new take-offs if they've got dirt and sealant on them.
Bars (OneUp carbon V2), grips and seat (Ergon for both) always.
I always cut down the handlebars, as they're always too wide for me.
